4-Ingredient Ice Cream Cookies
Ingredients
- 1 cup butter softened
- 2 cups flour
- 1 cup vanilla ice cream
- ½ cup blueberry or strawberry preserves (or another favorite flavor)
Instructions
- Mix softened butter and flour, then add ice cream. (If you have little ones helping you, you’ll be sure to get giggles from this part!)
- Chill until dough is slightly firm.
- Form into balls and place on cookie sheet.
- Flatten slightly and press a thumb print on top. Fill center with your choice of preserves.
- Bake at 350 for 20 minutes.

I had 2 brothers that lived near Flat Rock, Illinois. We would eat lunch at the Flat Rock Cafe and then go shopping at the Amish Market a few miles west of there. I loved the old farm house the Grocery store was in. Especially their "Horseradish Cheese". Great memories.

Flat Rock is in the middle of nowhere, but that Amish market is super, it is still there, recently moved to a newer, larger building, you'll have to check it out if you are out that way again sometime!
