This is a delicious, simple dish. I mean, isn't everything better with Everything Bagel? I love the stuff. For those who've been living under a rock, the seasoning originated from the "Everything Bagel" flavor of Lenders's Bagels. The Everything Bagel seasoning is a blend of sesame seeds, poppy seeds, dried onion, and garlic, to name a few. It is a delicious, beautiful blend.
This is the type of meal that is, by the way, popular in Amish kitchens: a one skillet meal with juicy chicken, some veggies, and simple seasonings.
Bagels, now I am digressing on topics, are not a food you commonly find in Amish homes. There just isn't a strong culinary/historical connection between typical Amish foods and the New York City-inspired bagels that have become so commercially popular. When any food becomes so popular commercially, though, it is bound to catch on among the Amish. So bagels are not unknown, being served and sampled at hotel breakfast buffets and on diner menus. Trendy foods catch on in Amish country. I remember a few years ago going to a small coffee shop in the heart of Amish country in Ohio and finding trendy avocado toast on the menu.
📋 Step-by-Step Everything Bagel Chicken and Corn
Easy, easy recipe, but so good and full of flavor! Start with four chicken breasts and some corn, cream of chicken soup, can of Coke (yay), mixed veggies, and, of course, Everything Bagel seasoning.
The Coke caramelizes everything into this wonderful swirl of flavors, so you get a slightly sweet hint, while the Everything Bagel seasoning brings out a different avenue of flavors.
Let the carrots, corn, green beans, and other mixed veggies cook along side the chicken. I did this all in my electric skillet. I started with frozen chicken breasts, so this dish took a solid 45 minutes to an hour of cooking before it was all done. You could get away with less time if you are using pre-cooked chicken. And, of course, when it is simmering like this is when you add the Coke. If you want a less caramelized, slightly less sweet version, skip the Coke, but I loved it just the way the recipe appears. Although I might have added a red pepper to it and maybe some mushrooms if I could do it over again. Possibly even some shredded cheese.
Otherwise, you really have an all-in-one meal here, unless you want to serve some fruit or a slice of bread on the side.
