I admit to being a pizza purist. True pizza should have a doughy crust, be cut into triangles, see somehow saucy and groaning with the weight of toppings. Ah, nothing better than pizza. So when I see something like "fruit pizza", I'm like "no way." If I want fruit, I'll have fruit. If I want pizza, I'll have pizza. Don't combine the two.

But this recipe actually works!
📖 The Amish and Fruit Pizzas
Fruit pizzas are popular among the Amish because, well, fruit and pizza are both popular so in the pragmatic Amish culinary view, why not marry the two? But it’s sort of a pizza parody, nobody is expecting fruit pizza to be a replacement for a piping hot piece of `za. What you have here is fruit combined in an imaginative way on top of a pretzel crust base, and the whole thing encased in a sweet glaze topping.
This is a perfect dessert to take to a potluck, after church gathering, or a picnic. It serves a lot of people, it’s filling, it’s sweet, and it’s very colorful, it beats some of the more draft desserts that you see.
📋 Step-by-Step Amish Fruit Pizza
This recipe has several steps, but they are all easy. And the ingredients are all simple.

I used peaches, blueberries, strawberries, and a few raspberries. But you could use kiwi and grapes, those would go well. I'm not so sure about apples or watermelon, I'd probaby be reluctant to try those. With apples you would have crisp fruit on top of crisp crust, so that doesn't seem appealing. And I'm not sure the watermelon would work with the glaze. But what do I know? People have all sorts of favorite combinations, so go ahead and use whatever fruit you wish!

I used pretzel sticks and I broke them, not crushed them. I mean, in some ways I think it could work well with crushed pretzels to form a very cohensive crust. I'd do it the way I picture above unless you want to experiment!

After you mix the brown sugar, melted butter, and pretzels, press into a pan like above.

This is the cream cheese mixture being spooned on the pretzel crust. I probably should have used the electric mixer a little longer, because there are still a few lumps of powdered sugar visible. But not a big deal.

Then it is time to make the glaze over a medium heat until it thickens. I had clear-gel on hand, that is a thickener that a lot of Amish cooks use and it is available at many bulk food stores. However, you can use cornstarch in its place. It'll turn out pretty much the same, the glaze will be a little cloudier, but not a huge deal.

I spooned and spread the fruit on top of the cream cheese mixture. This is what it looks like before pouring the glaze on top.

After you pour the glaze, stick it in the fridge overnight or at least for a few hours to really chill it and let the flavors meld. Oh, and then it is so delicious. Enjoy!

You can see the delicious pretzel crust, the layer fruit, and the glaze. So, so good!
