    The Amish Cook's "Cheat Cake" - Summer Blueberry Bliss

    My family reunion was today and I was tasked with baking something in our annual tradition "bake off" against my teenage nieces.  Honestly, between work deadlines, the Amish365 website, and a sick daughter, I really had no time for anything elaborate, but I also didn't want to bail on my nieces who were looking forward to the competition.  So, I dove into my Amish Cook archives and saw a perfect dessert to make in a pinch: The Amish Cook's "cheat cake."  Yes, even an Amish mom needs to cut corners on occasion. So if is good enough for The Amish Cook, it's good enough for me.  Easy, easy!

    Just some pie filling - any flavor - in a 9 X 13 pan.

    Dump a box of cake mix and drizzle a stick of melted butter on top and pop in the oven!

    Completed "Cheat Cake"

    The cake is often done using cherry pie filling, but I thought I'd use my favorite pie filling: blueberry, but I imagine it'd be good without any kind.

    Here is Gloria's recipe:

    DUMP CAKE

    1 quart pie filling of your choice

    1 pint crushed pineapples (optional)

    1 box white or yellow cake mix

    1 cup chopped pecans  (optional)

    1 /2 cup butter, melted

    Pour pie filling into a 9 X13 pan. Spread pineapple and then top with dry cake mix and pecans. Drizzle with melted butter. Bake at 350 for 30 minutes. Serve warm or cold.
