    Delicious Coca-Cola Pie

    When reader Elaine sent me a recipe for Coca-Cola Pie I practically swooned.   Regulars here know that I have a bit of an addiction to the beverage so when the chance came to put a can of Coke into a pie, I jumped.

    The recipe was on another website, but I thought I'd try it and adapt it and enjoy it.

    So, a few takeaways my my experience.  The recipe calls for a whole can of Coke! Man, was that satisfying, just cracking open a can and pouring 12 ounces of fizzy wonderfulness into the filling.  You have to put the filling over medium heat and and stir until it thickens.  But you don't want to stir it until it is like concrete....a thick pudding is probably the way to go

    The final verdict: a VERY good pie, very rich....wonderful topped with cold whipped cream.   Does it taste like Coke?  No, unfortunately, not really....tastes like a good chocolate pie, though , and that is not a bad thing.

    The "ganache" is an easy microwaved topping of chocolate chips and heavy cream, and that was delicious.

    🥧 Coca Cola Pie

    • 9 inch graham crust or traditional pie shell, baked and cooled
    • 1 ½ cups Coca-cola (12 oz can)
    • heaping ¼ cup cocoa powder
    • ⅓ cup brown sugar
    • ¼ cup corn starch
    • 4 tablespoons butter
    • 1 teaspoon vanilla

      Ganache

    • 1  ½ cups semi sweet chocolate chips
    • ½ cup half and half or heavy cream

    📋 Instructions

    1. Combine all ingredients except vanilla in a sauce pot and then place over medium heat.
    2. Stir constantly with a whisk until thickened, 5-10 minutes. Remove from heat and stir in vanilla.
    3. Pour into graham cracker crust or baked and cooled traditional crust. Cover and place in the refrigerator until thoroughly chilled.
    4. For ganache, chocolate chips and cream in microwave bowl.
    5. Place bowl in microwave for 45 second intervals, stirring after each, until chips are melted and mixture is creamy and easy to blend.
    6. Stir together until thoroughly blended and creamy. Allow ganache to cool for five to ten minutes before spreading on top of refrigerated pie.

    Ingredients
