This casserole is a delicious and easy one to put together. This recipe comes from an Amish woman in Indiana who would have a plentiful supply of what she called "chunk beef."
While cooking the beef until tender you can season it to your taste with salt or pepper. Other seasonings like thyme or garlic go well.
Cook the beef stew meat until fully done over medium-high heat. Use the freshest beef chunks you can get your hands on.
This recipe has simple ingredients like cubed bread, eggs, milk, onion, corn, and grated cheese. I do think that you could add some egg noodles, or some rice, mushrooms, carrots, celery, and other veggies. This particular recipe you bake in the oven casserole-style. But you probably could make it stew-style in a slow cooker , crockpot, or dutch oven. Regardless, beef casserole is delicious and the ultimate comfort food.
Pour the corn, bread, milk mixture over the meat - no need to stir unless you want to, I like the meat layered at the bottom - sprinkle some black pepper on top (optional) and then put in the oven.
I love corn and chunk beef, so obviously this is a favorite for me. So delicious. I think the recipe just as is is great, but, again, you can add other vegetables to this that you like. Potatoes are also a possible nice addition.
Put leftovers in an airtight container and store in the fridge. This recipe pairs well with sliced homemade bread, apple sauce, or fruit.

Comforting Amish Beef Stew Casserole
Ingredients
- 1 pound canned beef chunks
- 3 eggs
- 2 cups milk
- 1 cup onions chopped
- 2 tablespoons butter
- 6 slices bread, cubed
- 1 /2 teaspoon salt
- 1 quart corn
- 1 cup grated cheese
Instructions
- Cook the beef chunks in a skillet on medium high.
- Place cooked meat in a baking dish.
- In a bowl. beat eggs, milk, salt,and add broken up bread, corn, and onions.
- Pour on top of the meat.
- Melt butter and pour over top.
- Bake at 350 for 30 minutes. Remove the casserole from the oven and sprinkle cheese over all and bake until cheese melts.
