This is an incredible recipe that is definitely on my try-again list! It came to us from an Amish woman in Oklahoma, and my parents tried making it for their supper (and I gladly sampled it). And, wow, these are good!
What I love about this recipe is that the patties are baked, not fired, so there's a bit of a healthier component to them. And the corn flakes at this super crunch factor to the patties.
🍔 Why Patties?
Of course, the most famous patty at all, well, besides Peppermint Patty, is the hamburger patty. Patties are just a very easy way to get a lot into a little. Usually, eggs act as the "glue" that holds the patty together, and once you have your chosen meat, and some eggs, you can be very versatile with the rest. You can add crunch like celery, you can add veggies like carrots and peas to almost any kind of patty.
My grandmother always mixed in Parmesan cheese to just about any patty. Breadcrumbs are also great to add to a patty for consistency and flavor. A lot of Amish use oats for the same reason. And breadcrumbs and or oats added to a patty of any sort can help stretch the meat out.
And patties can be fried or they can be baked. It's just a very versatile way to use meat. And, of course, they can be eaten on a bun if it's a hamburger patty. I suppose you can eat a salmon patty or a chicken patty on a bun. So, yes, there's just a lot that can be done with patties, and that's why they're popular in Amish kitchens.

Some of these patties are best on a bun, like hamburgers, but I think salmon patties taste better with a dip, but that is a matter of personal preference!
📋 Step-by-Step Chicken Patties
My parents used a food processor to shred the chicken into small bits, which I think was a smart strategy and something you can definitely do. I am someone who likes larger chunks of everything, but I still liked the food processor version. Other people, though, have tried it using chicken meat from a rotisserie chicken. That would probably be my preferred route.
This is where you mix everything together. The recipe just says "shredded cheese," it never says what kind. We used cheddar cheese, but you can do Colby, or mozzarella. Parmesan would also be a good choice. This is also the stage where you can add whatever seasonings you like. Add some black pepper or garlic powder if you want to give the patties a little more pop. Basil or oregano are two of my favorites to add to something like this. Use your imagination!
Make sure your eggs are large, if they are medium or small, then use four eggs, that will hold the patties together better.
Dredge each patty through corn flakes and then place on a baking sheet or in a baking pan.
Stick these beauties in the oven for about 45 minutes until they are golden brown.
The chicken patties pair well with veggies on the side, like asparagus or green beans. These patties were so moist and flavorful that I didn't feel a need to dip them in anything which is unusual for me. Usually, I like to dip things like this into barbecue sauce or ranch, but they were full of flavor just as is!

Delicous Amish Cornflake-Crusted Baked Chicken Patties
Ingredients
- 3 cups chopped, cooked chicken
- ½ cup celery, chopped
- 1 /2 cup onion
- 3 eggs, beaten
- 1 teaspoon poultry seasoning
- 1 cup cheese, grated
- ½ cup melted butter
- 1 cup crushed corn flakes
Instructions
- Preheat oven to 350.
- spray a baking pan or sheet with cooking spray and set aside.
- In a large bowl, mix all ingredients except for the butter and cornflakes.
- Mix everything until well combined.
- On a separate plate, crush cornflakes and mix with melted butter.
- Dredge both sides of patty through the cornflake mixture
- Place into baking pan and bake for 45 minutes or until golden.

We made something like this years ago with hot dogs. You bought corn flake crumbs, they come in a box, and dipped the hot dogs in ketchup and then rolled them in the crumbs & baked them in the oven. I have also made it with chicken breasts. It's very good!
