    Economy Stew

    An Amish man sorts homegrown potatoes..

    Potatoes are a big part of this economy stew...

    I've had this recipe for awhile but haven't posted it. "Economy Stew" just sounds so....unappealing, like a can of Dinty Moore or something like that.  But I've actually heard good things about this dish, so I thought I'd share:

    Economy Stew

    Ingredients
    • 2 potatoes, sliced
    • 1 /2 cup of celery, chopped
    • 1 can of tomato soup
    • 1 pound of lean, uncooked hamburger
    • 1 cup of onion, chopped
    • 1 can of pork and beans
    • salt and pepper
    Instructions
    1. Put potatoes, onions, and celery on the bottom of a casserole dish.  Dash it with salt and pepper to taste.  Put beans on top of the bottom layer, then tomato soup and cover with uncooked hamburger.  Bake for 2 hours at 350.
