An Amish man sorts homegrown potatoes..
Potatoes are a big part of this economy stew...
I've had this recipe for awhile but haven't posted it. "Economy Stew" just sounds so....unappealing, like a can of Dinty Moore or something like that. Â But I've actually heard good things about this dish, so I thought I'd share:
Economy Stew
Ingredients
- 2 potatoes, sliced
- 1 /2 cup of celery, chopped
- 1 can of tomato soup
- 1 pound of lean, uncooked hamburger
- 1 cup of onion, chopped
- 1 can of pork and beans
- salt and pepper
Instructions
- Put potatoes, onions, and celery on the bottom of a casserole dish. Â Dash it with salt and pepper to taste. Â Put beans on top of the bottom layer, then tomato soup and cover with uncooked hamburger. Â Bake for 2 hours at 350.
