    Grilled Cheese For Grown-Ups

    Our friend Jessica inspired us to make some yummy summer grilled cheese sandwiches. Many Amish, by the way, refer to grilled cheese as "cheese toasties."  Grilled cheese is a staple of summer lunch menus and some even eat it for breakfast.  But sometimes a person wants grilled cheese with a little more zing and that is where these sandwiches come in. Packed with cheese, avacado, tomato and some spice, this might not make the kids menu, but it dose make mine:) Don't these look delish? The recipe below makes 3 sandwiches

    GROWN-UP GRILLED CHEESE

    1 avocado

    1 hot banana, jalapeno, or Sorreno pepper

    6 slices of white cheddar cheese

    1 whole tomato sliced

    Butter a cast iron skillet.  Place sandwiches in the skillet over medium heat.  Toast each side until the cheese is melted and the bread is golden brown.
