    Homemade Rhubarb Squares

    Rhubarb season is upon us and that means, at least in Amish Country, lots of rhubarb inspired dishes from crunches and crumbles to squares and even cookies.  This is a popular recipe in Amish kitchens this time of year!

    RHUBARB SQUARES

     

    Homemade Rhubarb Squares

    Ingredients
    • Filling:
    • 4 cups rhubarb cut into ¼-inch pieces
    • 2 cups water
    • 1 cup granulated sugar
    • 3 tablespoons cornstarch
    • ½ teaspoon almond flavoring
    • Crust:
    • ¾ cup shortening, softened
    • 1 cup packed brown sugar
    • 1 teaspoon baking soda
    • 1 teaspoon vanilla extract
    • 1 cup flour
    • 1 cup quick-cooking oats
    • 1 teaspoon ground cinnamon
    Instructions
    1. DIRECTIONS: Preheat the oven to 350 degrees. Lightly grease a 9 by 13-inch pan and set aside. To make the filling: In a medium saucepan over low heat, cook the rhubarb, water, and sugar until bubbling. Then add the cornstarch and stir until the cornstarch is mixed throughout and the mixture has thickened. Add the almond flavoring and stir. Keep on the stove over low heat.

      Kevin, My aunt had used Aldi for years and like you I poopahed it until they began to take bank cards. You need to try the spiral sliced ham we had it at her house for years before finding out where it came from. The only problem I had was with a small tenderloin and while it tasted great it didn't turn out well. I always get my colored peppers there you can get 3-4 for what you pay for 1 at the other grocery stores. Some how though bread seems the same price?

      What is the amount for the oats. I figured they would be an ingredient, but they are not in the ingredient list. I love rhubarb, and just made a big pot of rhubarb sauce. Yummy.

      Doesn’t tell how to put it together. Sounds so yummy. I get my bread at Aldis and it is half the price of grocery store.

      I am in the process of making the homemade rhubarb bars, but it quits before it gives the last part of the recipe ...it stops at the filling on the stove. Please give me the last step.,thank you!
