Wow, this recipe makes my mouth water. This recipe is from the Amish Cook archives and I may just have to get some fresh rhubarb next time I am in Amish country so I can make these myself. Wow, these sound good!

Frosted Rhubarb Bars
a delicious dessert
Ingredients
- 4 eggs, beaten
- 1 cup oil
- 2 cups sugar
- 1 cup cooked rhubarb
- 1 teaspoons. baking powder
- 2 cups flour
- 2 teaspoons. cinnamon
- ½ teaspoon salt
- 1 teaspoon baking soda
Frosting
- 1 3-oz package cream cheese
- 6 tablespoons butter
- 2 cups powdered sugar
- 1 teaspoon vanilla
Instructions
- Mix in order given.
- Put in jelly roll pan or two 9 x 13 pans.
- Bake 25-30 minutes at 350 degrees.
- Put frosting on bars while still warm. Rhubarb bars ready Remove from the oven and allow the cookies to cool on the cookie sheet for 5 minutes and then transfer them with a spatula to wire racks to cool completely.

The recipe says 1 cups. That doesn’t seem like enough for a jelly roll pan. Or 2 9x13 .

The recipe I have and make calls for 4 cups of diced rhubarb.
