    Rhubarb Bars

    Wow, this recipe makes my mouth water. This recipe is from the Amish Cook archives and I may just have to get some fresh rhubarb next time I am in Amish country so I can make these myself. Wow, these sound good!  This is a recipe from her mother's recipe file.  The rhubarb, if it is not already, will be coming up fast and furious now, producing generous stalks like in this photo.

     

     

    RHUBARB BARS

    Rhubarb Bars

    Ingredients
    • 4 eggs, beaten
    • 1 cup oil
    • 2 cups. sugar
    • 1 cups cooked rhubarb
    • 1 teaspoons. baking powder
    • 2 cup. flour
    • 2 teaspoons. cinnamon
    • ½ teaspoons. salt
    • 1 teaspoon soda
    • FROSTING:
    • 1 (3 oz.) pkg. cream cheese
    • 6 tbsp. butter
    • 2 c. powdered sugar
    • 1 tsp. vanilla
    Instructions
    1. Mix in order given. Put in jelly roll pan or two 9 x 13 pans. Bake 25-30 minutes at 350 degrees.
    2. Put frosting on bars while still warm. Rhubarb bars ready

      I need to make these for my husband. I can't stand rhubarb, but he loves it. It'll make a nice surprise for him. 🙂

      The recipe says 1 cups. That doesn’t seem like enough for a jelly roll pan. Or 2 9x13 .
