Zucchini is sort of like sauerkraut in that it can be shredded or grated and added to a surprising array of items to add bulk and flavor. This chocolate zucchini bar recipe is one such example. I've had these before and I don't know that anyone is going to walk away from eating saying "gee, that zucchini sure was great!", but it adds a texture and flavor that really makes for a mellow, moist bar. Super Moist Chocolate Zucchini Bars
Ingredients
- ½ cup butter
- 1¾ cups white sugar
- ½ cup vegetable oil
- 2 eggs
- 1 teaspoon vanilla extract
- 2½ cups all-purpose flour
- ½ teaspoon salt
- 4 tablespoons unsweetened cocoa powder
- 1 teaspoon baking soda
- ½ cup sour milk
- 1½ cups grated zucchini
Instructions
- Preheat oven to 325 degrees F.
- Cream margarine, sugar, oil, eggs, and vanilla. Beat well.
- Mix flour, salt, cocoa, and baking soda together. Add dry ingredients to first mixture alternately with sour milk.
- Fold in zucchini.
- Bake in a 9 x 13 inch pan for 35 minutes or until done.
- Frost with a chocolate frosting.
