    Totally Refreshing Lemon Yogurt

    I have childhood memories of my Mom eating Dannon yogurt in a few fruit flavors and that was that. Now, however, yogurt seems like it is everywhere doing everything. There's yogurt with crumbled cookies in it, cookie dough, syrups, nuts, and flavorings. And then there's Greek yogurt, Icelandic yogurt, Australian yogurt, and on and on. Yogurt has definitely gotten more complicated since I was a child. But yogurt has a long, interesting history.

    Oh, and then there is soft-serve frozen yogurt that resembles ice cream. It's pretty good stuff, I think. But by the time you load it up with sprinkles, candy, syrups, and so on it is not that healthy.

    I have actually been to an Amish home once when a husband and wife were making their own homemade yogurt. I learned a lot of from them. For instance, whole milk should be used, because lower fat milks can cause a runnier yogurt. Also, the sugar can be omitted for a less sweet variation. Finally, many Amish yogurt-makers use leftover yogurt from a previous batch to make yogurt. If this is your first batch, you can use plain store-bought yogurt. Just make sure it doesn't have any added ingredients and includes live, active cultures.

    The recipe really has very basic ingredients and you can swap out lemon for other flavors if you wish.

    A good thermometer is key when making yogurt so you don't heat too much and kill the cultures.

    • 2 quarts milk
    • 1 tablespoon unflavored gelatin
    • 1 /2 cup water
    • 2 tablespoons plain yogurt
    • 1 /2 cup sugar
    • 6 tablespoons lemon jello
    • 1 tablespoon lemon juice

    📋 Instructions

    1. Heat milk to 180.
    2. Remove from heat.
    3. Dissolve gelatin in cold water and then add to milk.
    4. Cook to 130 and add yogurt and sugar.
    5. Let set at room temperature for 8 – 10 hours.
    6. Refrigerate then whisk in lemon jello and lemon juice.

    • Cool to 130 degrees Fahrenheit and addyogurt and sugar.
    • Let set at room temperature for 8-10 hours.
    • Refrigerate,then whisk in Jell-O or pie filling.

      Can one use powdered milk to make this yogurt?

        Hmmmm, Ann, I don't know...I think it probably would work, the make up of powdered milk vs. whole milk isn't a lot different once it is reconstituted ...if you try it, let me know

      Regarding the lemon jello or pie filling--am I correct in assuming that this is just the powder and not already prepared?

      Loved Friendly's in VA. Moved to Fla. No Friendly's, later they started building a Friendly's and my daughter was so excited. She kept telling her friends, and they didn't get it, but when it was done, it was the place to go. Always busy. Then we moved to Tn. no Friendly's. Loved Bill Knapp's such good chocolate cake. Howard Johnsons ice cream was really good, also.
