The Mennonite cookbook featured on today's Amish Etsy has some really great, traditional old Mennonite recipes on its pages and I thought I'd share a couple with you today...interestingly, hamburger, in the recipes is called "hamburg" that seems to be an old linguistic custom that I find in older Amish cookbooks from Lancaster County. Charming Mennonite cookbook, having been published in Lancaster County in the late 70s, I'd bet this book is a goldmine of authentic PA Dutch recipes...
- 2 pounds round steak
- 2 tablespoons cooking fat
- 2 cups tomato sauce
- ⅓ cup water
- 2 tablespoons brown sugar
- 1 tablespoon prepared mustard
- 1 tablespoon Worcestershire sauce
- 1 medium onion, thinly sliced (optional)
- Slice steak into strips ⅛ inch think and 3 inches long.Brown the strips in fat and then pour off drippings. Combine tomato sauce, water, brown sugar, mustard, and Worcestershire sauce. Add this mixture and the onion to the beef strips. Stir well. Cover and cook slowly, stirring occasionally for 30 minutes or until moist and tender.

- 1 cup kidney beans
- 1 cup lima beans
- 1 large can of pork and beans (1 pounds, 5 ounces)
- 1 pound hamburg
- 1 /2 pound bacon
- 1 /2 teapsoon mustard
- 1 /2 cup catsup
- 1 /2 tablespoon vinegar
- 1 / 2 cup brown sugar
- 1 /2 teaspoon salt
- 1 cup chopped onion
- Drain kidney beans. Brown bacon and pour off drippings. Brown hamburg until red disappears. Add onions and brown lightly. Pour beans, meat mixed well in a 2 quart casserole and bake at 350 for 1 /2 covered and 1 /2 hour uncovered.
