A classic weekend dish in an Amish home, combines pasta and easy heartiness. Â This recipe comes to me from an Amish woman in New York. Â Homemade noodles are often more common in Amish kitchens than store-bought spaghetti, but it is something you see more and more. Â Putting "spaghettis" into chili is common in Amish kitchens. Â Enjoy this dish!
One-Pot Spaghetti Supper
Ingredients
- 12 ounces spaghetti or homemade egg noodles
- 6-8 tablespoon olive oil
- 2 medium onions, chopped
- 2 medium carrots, very finely chopped orgrated
- about 4 garlic cloves
- 3 cups home-canned chopped tomatoes with liquid or use store-bought
- 2 tablespoon tomato puree
- 1-2 teaspoon sugar
- about 6 cups vegetable broth (or chicken broth)
- parsley, basil, oregano, thyme, allspice (to taste)
- salt, pepper
Instructions
- In a pot, heat the oil and saute onion until translucent.
- Add carrots and garlic and saute for 1 more minute.
- Add chopped tomatoes, tomato puree, sugar, spices and about 4 cups broth.
- Bring to boil and cook for about 15 minutes.
- Add spaghetti and simmer until the pasta is tender, about 15 minutes.
- Stir from time to time and add more broth while cooking to achieve consistency you like.
- Serve with grated Parmesan cheese (optional).
