📋 Step-By-Step Blueberry Lemon Bread
This is an easy bread to make. It's a very basic bread recipe.

Use a big bowl to mix the sugar and butter together into a crumbly consistency.

Use two large eggs. Most Amish have a ready supply of fresh eggs and those work the best in the recipe, but use any kind you have. Add the eggs alternately.

White flour is used in this recipe, but you can use a blend of wheat and white if you want or even all wheat. All-purpose flour is fine for this.

And these are the real stars of the show: the blueberries. Use organic, plump blueberries if you can. These make much better bread than the cans of small, mushy blueberries that come in the muffin mixes.

You can use a 9 X 9 square pan or pack the batter in a loaf pan.

This bread can take a long time to bake, so don't be concerned if you go well over an hour. Use the toothpick test at the one hour mark, but it may need up to 75 minutes to bake, that is how long this loaf took. Probably less if you use a square pan.
One thing we didn't do when baking this is add some lemon flavor to the batter, I think adding a quarter cup lemon juice to the batter would also make for super flavor if you are a lemon lover.

Delicious Amish Blueberry Lemon Bread
Ingredients
- 1 / 2 cup butter
- 1 1 /2 cups sugar
- 2 teaspoons baking powder
- 1 /2 teaspoon salt
- 2 eggs
- 2 cups flour
- ½ cup whole milk
- 1 1 /2 cups blueberries
topping
- 1 /4 cup lemon juice
- ⅓ cup white sugar
Instructions
- Beat together butter and sugar.
- Then add baking powder and salt.
- Add eggs one at a time and stir well.
- Add flour and milk alternately.
- Stir in blueberries gently and pour batter into a 9 X 9 pan or loaf pan and bake for about 1 hour.

the potato planting method sounded interesting but I am a bit confused. if the potato seeds are on top of the soil and then covered with straw, is the digging just digging through straw or is the soil so prepared that the roots that hold the new potatoes still penetrating into the soil and thus requiring actual digging. ????????????????

As a summer less-heat alternative, though it is not a bread but rather an upside-down cake, I do the following:
In a greased 8 inch microwave-safe round or square pan place one pint blueberries evenly on the greased bottom of the pan.
Sprinkle with 1-2 tsp ground cinnamon and grated lemon rind from one medium lemon.
In a bowl mix 1/2 box lemon cake mix, 2 TBSP neutral oil, one beaten jumbo egg, 1/4 cup water, and 1/4 cup plain full fat yogurt. Beat 100 strokes with a wooden spoon.
Pour batter evenly over berries, using spoon to get into edges/corners.
Microwave on high for 8 minutes, or until toothpick inserted in center comes out clean. Cool approximately 10 minutes and invert onto serving plate.

I have made this a few times. I is wonderful how it is written but doesn't have any lemon flavor in the bread itself, so next time I added the zest from a large lemon and that made such a difference. The zest adds nice lemon flavor with the blueberries.
