Pumpkin is one of the true seasonal highlights in Amish produce patches. They don't begin to display their orange glory until the waning days of summer and early fall and by then Starbucks has had their pumpkin spice latte out for weeks and the first hints of fall have added a crispness to the air.

📋 Step-by-Step Pumpkin Cheesecake Bars
This is a recipe that is a classic Amish bar, but it has a Fall filling. Not that you couldn't make these bars in March or April, but these are perfect for autumn. The bars feature a filling and a crumb crust and topping.

These are the ingredients that come together to make the crumb crust and you'll set some aside for a crumb topping.

Combine them in a big bowl until you get coarse crumbs that are perfectly mixed.

Press the crumbs into a baking dish.

This is the part where you making the filling. An Amish cook would likely use the lighter-colored home-canned pumpkin filling and add a bit more spices like cinnamon, nutmeg, pumpkin pie spice, or cloves to the mixture. You could also add a teaspoon of Allspice.

These are the filling ingredients after you have them completely combined. You then pour the filling onto the baked crust (below).

Pour the filling over the top of this, then sprinkle some of the crust crumbs on top and bake for 30 minutes and, wow, you have these amazing bars!
