There is not much step-by-step to this, it was incredibly easy.

You can see the ingredients in this soup are very basic, but there is a lot of room for experimentation with different veggies and seasonings, but if you want ot keep it super simple, stick to the recipe as presented here.

Chopping the veggies will be the most difficult part of this, but you also can "cheat" and buy pre-chopped if you want.

Serve with bread or cheese and crackers. You could also top with bacon bits. Either way, this soup is super!

By the way, I know a lot of people don't like Velveeta cheese (a lot of people do, though!), so you just swap it out for regular shredded Cheddar instead and it'll still be a super soup!

Creamy Vegetable and Rice Soup
Ingredients
- 1 qt chicken broth
- 2 cups cold water
- ½ cup rice, uncooked
- ½ cup celery
- ½ cup carrots
- 1 cup potatoes
- 1 tablespoon chicken base
- 1 teaspoon salt
- ¼ teaspoon black pepper
- 2 cups chicken, diced and cooked
Instructions
- Dump altogether in a 4 quart kettle,
- cook over medium heat until veggies are tender.
- Add½ cup sour cream and ½ pound melting cheese such as Velveeta.
- If desired serve with crackers and bread sticks. Yummy!
