Honey is a delicacy in Amish households. Many Amish partake in beekeeping, so they can have their own hives full of honey throughout the yea and make goodies like the Amish Honey Cake Cookies. Whether there are a lot of Amish beekeepers especially depending on where they’re located.

The Amish, for instance, in aptly named Beeville, Texas, where it is warm year-round, can have honey year-round. The honey can have distinctive variations and flavors from place to place, depending on the local flower varieties that are prevalent.
Once an Amish homemaker has a ready supply of honey, it is put to use in many things, including, as a sugar substitute, or just an additional sweetener. Honey can be put into tea, coffee, almost any baked good, drizzled over cereal, and on and on. It’s even used as a flavoring in meat dishes. So honey is about as versatile of an item as you can find.
It’s not uncommon in more northern areas to find Amish homemakers who will supplement their sugar supply by making homemade maple syrup in the early spring, and then having bees throughout the warm months to provide honey. When you are an Amish homemaker with a large family and farm, self-sufficiency is the watchword. The more stuff you can keep in-house, like sweeteners, the better.

Lard is the lead ingredient in this recipe and, yes, if you don't have lard on hand (who does?), you can use another type of shortening (Hello, Crisco). But lard is unbeatable for its flavor and texture for this category of baked goods.
The beauty of this recipe is the very basic ingredients. It's amazing how so few ingredients can result in so much taste!
Blend everything together well in a bowl and you really want to try to chill your dough overnight. That greatly enhances flavor!
