Mushrooms are a favorite in Amish kitchens and are often used to make meals like this recipe for Amish Mushroom Barbecue Burgers. The mushrooms that are the most popular are ones that can be foraged for free on one's own property.

Our Amish Cook columnist stumbled upon a "mother lode" of morels earlier this spring and they fried them up for an awesome meal for their church. At the other end of the spectrum, highly processed, salt-packed Campbell's Cream of Mushroom soup is also popular as a flavoring in casseroles, meats, etc.
Mushrooms seem to be one of those foods that people either love or hate. Put me firmly in the "love" category. I enjoy grilling a big portobello mushroom cap and just putting that on a bun and eating it as a "burger." Now, if you absolutely hate mushrooms then you are probably not reading this post in the first place. But if you still are, you could easily make this burger without the mushrooms. I mean, it'd still be a very good burger.
This is a recipe from an Amish cook for mushroom-barbecue burgers. I'm posting photos of mushroom burgers that my parents made last night which are basically the same, except they sauteed mushrooms and put them to the side (I would have piled them onto the burger) and sans the barbecue sauce. My parents were also good stewards of carb consciousness and ditched the bun. Not me. Enjoy!
🍔 Amish Mushroom Barbecue Burgers
- 1 ¼ lb ground beef
- 1 teaspoon salt, divided
- ¼ teaspoon plus ⅛ teaspoon black pepper, divided
- 1 tablespoon olive oil
- ½ cup thinly sliced yellow onion
- 2 cups sliced button mushrooms or equivalent
- 4 tablespoons your favorite barbecue sauce
- 4 slices Cheddar cheese
- 4 onion rolls, split, lightly toasted or grilled
📋 Instructions
- Combine the beef, ¾ teaspoon salt and ¼ teaspoon black pepper.
- Shape into 4 patties, ½-inch thick.
- Grill the patties, 4 to 5 minutes per side or until the internal temperature reaches 160˚F.
- Meanwhile, heat the olive oil in a large nonstick skillet over medium-high heat.
- Add the onions and cook for 2 minutes.
- Stir in the mushrooms, barbecue sauce, remaining ¼ teaspoon salt and ⅛ teaspoon black pepper. Cook and stir for 5 minutes or until tender.
- Place cheese slices over patties during the last minute of cooking.
- Serve the burgers in rolls topped with mushroom and onion mixture.

I, too, love mushrooms. . . Fresh are best. My M-I-L used to make a rice dish with Lipton Onion soup mix and cans of mushrooms. I never use canned but her skillet dish was always delicious.
