    Amish Sausage Biscuit Casserole

The Amish who live in Montana really are known for their hearty pull-out-all-the-stops casseroles like this Sausage Biscuit Casserole.  This hearty casserole is a favorite among the Amish in St. Ignatius and Rexford, two of the oldest Amish settlements in Big Sky Country.  My parents tried it the other night and enjoyed it.

By the way, this is an excerpt of something I wrote about the Amish of St. Ignatius, Montana:

The first thing that strikes a visitor to the St. Ignatius settlement is the beauty. Stunning vistas of the Mission Mountains are a constant.  Most of the Amish homes are wedged right up against the base of the mountains which rise dramatically from the valley floor.

Many of the Amish of St. Ignatius have deep family ties back in Ohio, so these Amish will hop onto commercial flights and travel.  Most Amish churches do not permit air travel.  Food in this settlement ranges from traditional to local, with wild game from the mountains and fresh huckleberries being found on menus frequently.

You can read more here.  I loved my time in St. Ignatius, just gorgeous and if you ever have a chance to go, go!  Now, let's check out this casserole!

My parents, by the way, halved the recipe and that reflects in the photos...you can fix the whole recipe or halve it, it works either way! Pair with a veggie and you have a great meal!

I made this last night and it was phenomenal. This is a great dish for the morning when company is coming over, as it is made the day ahead. We had it for dinner and enjoyed every bite of it.

This amish biscuit casserole sounds amazing, and I plan on making it soon! I am a little confused, though, because when I click on Montana Cowgirl Casserole it brings up the sausage biscuit casserole; are they the same thing or is there a separate recipe for the Montana Cowgirl dish?
