This cake combines three of my favorite things: Coke, cake, and a recipe from Carmon Hacker. You combine those three things and you can't go wrong. Amish recipe? Nah, would an Amish person like the recipe? Absolutely. You know, I've found that, in my experience, Mountain Dew is far more popular among the Amish than Coke. I wonder if this would work as Mountain Dew cake?
Soda is not something that has a long time cultural connection to the Amish, but they have adopted the drink - unfortunately - and you do see soda being consumed among the Amish. Mountain Dew is popular but, so, I have noticed, is Pepsi. I rarely, for whatever reason, seeing Amish people consuming my drink of choice: Coke.
Carmon is from the town of Trenton, Ohio and I remember years ago visiting a home as a young reporter and the person's house was entirely decked out in Coke memorabilia: signs, coasters, empty glass Coke bottles, vending machines, Coke coffee table, Coke kitchen chairs and tables....now THAT would be my kind of house. I remember when I was in junior high Coke came out with its own clothing label and I was all over that.
SIGH, I know someday my affection for Coke is going to have to come to an end...let's face it, you don't see many 90-year-olds guzzling cans of Coke. I'm sure there is a correlation.

Coke cake is the best!

Gasp - yes - you could use Pepsi, but don't do that! Now, maybe RC...RC Cake might be good!

Delicious!
- 1 cup butter (2 sticks)
- 3 Tbsp. unsweetened cocoa powder
- 1 cup cola
- 2 cups all-purpose flour
- 2 cups sugar
- 1 tsp. baking soda
- ½ tsp. salt
- ½ cup buttermilk
- 2 eggs
- 1 tsp. vanilla
- 1 ½ cups mini marshmallows
- Icing:
- ½ cup butter
- 6 Tbsp. cola
- 3 Tbsp. unsweetened cocoa powder
- 1 lb. powdered sugar
- 1 tsp. vanilla
- 1 cup chopped walnuts
- Preheat oven to 350 F. Grease and flour a 9” x 13” pan. In a small saucepan, heat butter, cocoa powder and cola on medium, just until butter melts and mixture begins to simmer. Remove from heat, and in a large bowl, mix flour, sugar, baking soda and salt. Pour cola mixture over flour mixture and mix well with a wire whisk. Finally, add buttermilk, eggs, vanilla and marshmallows. Pour batter into pan and bake in preheated oven for about 35 minutes, or just until the center is done and springs back when touched lightly with finger.
- For the frosting: In a medium saucepan, combine butter, cola and cocoa powder, heating until butter melts. Remove from burner and add powdered sugar, vanilla and nuts, stirring until all is well-blended.
- Pour over cake while icing and cake are still warm. Enjoy!
