    Christmas Morning Classic: Amish Waffle Casserole

    This is a wonderfully classic Amish waffle casserole recipe popular in Amish homes and it makes a wonderful Christmas morning breakfast. And the great thing about this recipe is that you can do it the easy way or the hard way.  Yes, you can make your own homemade waffles.  Always a treat. Click here if you want the Amish Cook's homemade waffle recipe.    Or if you want to cut a corner - and that would be my vote - buy frozen waffles and, toast them, and incorporate them into this delicious casserole. 

    Recipe tester Barbara gave this a shot and shared photos with her. A huge thank you to Barbara.  Her husband's reaction to the casserole: "He said was very moist, not dry, and is pretty filling. This is a great alternative to the other casserole dishes for breakfast, a nice treat"

    Meanwhile, Barbara said: " I liked because is a little sweet and savory at the same time. Was very easy to put together and will be fun to make when we have visitors!"

    Waffles toasting

    Use the freshest ground sausage you can find

    Waffle casserole

    Out of the oven

    And onto the plate....

    8 toaster waffles, lightly toasted and chopped
    1 pound  sausage
    8 eggs 
    1 cup shredded cheddar cheese
    1 cup milk 1 tablespoon dry mustard 
    salt
    Fresh cracked black pepper
    Maple syrup for drizzling Instructions
    Grease a 2-quart casserole dish. Layer ½ of the waffle pieces into the bottom of the casserole dish. Top with ½ of the browned sausage, and ⅓ of the cheese. Repeat with remaining waffles, sausage, and ⅓ of the cheese. Mix the eggs, milk, dry mustard, salt, and pepper together in a medium bowl. Carefully pour the egg mixture into the casserole dish.  Cover the casserole dish with plastic wrap and refrigerate. Preheat over to 350 degrees F.  Cover the casserole loosely with foil and bake for 40 minutes. 8. Remove the foil, top with the remaining cheese, and bake for 10 to 15 more minutes, or until the eggs have completely set. 9. Top with maple syrup if wanted
