    Refreshing Creamsicle Salad

    You know, you wouldn't think something like refreshing creamsicle salad with cream cheese and crushed pineapple would be very "Amish" in its orientation,but you'd be wrong!   Amish cooks go shopping like anyone else, and they like sweets like marshmallows as much as anyone else.

     And they'll use these ingredients in very inventive ways. While I've not seen a creamsicle salad on an Amish dessert table, I've seen a lot jello, marshmallows, and fruit in dessert creations at Amish get-togethers.  This creamsicle salad would be right at home after an Amish church gathering!

    I’ve been making this creamy, fruit-laden salad, or dessert if you wish, for at least 20 years. It’s quick to assemble, and the ingredients can be modified to taste.  For example, you can add an extra can of mandarin oranges if you prefer, or throw in one-half cup of coconut for extra flavor and texture.  Whenever I take it to a potluck or holiday dinner, it never fails to receive a myriad of “Oohs” and “Ahs,” so I usually take the recipe along, and admirers can simply  take a picture with their phones.  Hope you enjoy it as much as my family and friends do!

    Marshmallows are a staple in Amish kitchens! If you go to any Amish bulk food store you'll see bags and bags of marshmallows on sale because they can be used in so many ways and, of course, children love them and children are a mainstay of most Amish homes.

    The orange gelatin or Jell-O complements all the flavors. I remember the first Amish Cook I worked with back in the early 90s, she always marveled about the first time she ever saw or tasted Jell-O. Jell-O has definitely become a fixture in Amish kitchens.
    So, check out this wonderful Amish Cook editor-approved recipe for refreshing creamsicle salad !

    🥄 Creamsicle Salad

    • 8 oz. cream cheese, softened
    • 20-oz. can crushed pineapple, drained
    • 16-oz. tub whipped topping (like Cool Whip)
    • 2 cups mini marshmallows, fruit-flavored or regular
    • 6-oz. pkg. orange gelatin
    • 1 to 2 15-oz. cans mandarin oranges

    📋 Instructions

    1. In a large bowl, combine cream cheese and pineapple.
    2. Fold in marshmallows, whipped topping, and orange gelatin.
    3. Lastly, stir in mandarin oranges.
    4. Spoon into a large glass bowl for best presentation and cover with plastic wrap. Refrigerate at least two hours before serving.
    5. Can sit out for at least an hour without getting watery

    A wonderfully refreshing summer treat that can be a salad or dessert!

    Ingredients

      In carmons creamsicle salad do you drain the mandarin orange s or put juice in?
