    RHUBARB CUSTARD PIE

    This is the time of year for rhubarb and it's a mainstay in Amish kitchens, which means recipes like Rhubarb Custard Pie become the norm.  There's so much you can do with rhubarb.  One of the favorites is a homemade rhubarb custard pie.  Take a look at this beautiful rhubarb-custard pie that Lovina made recently.  Can you say: YUM!:)

    RHUBARB CUSTARD PIE

    Rhubarb Custard Pie

    Ingredients
    • 1½ cups rhubarb, fresh diced
    • 2 tablespoons flour
    • 2 eggs
    • 1 cup sugar
    • ¾ cup cream
    Instructions
    1. Preheat oven to 350. In a large bowl, mix together all ingredients except rhubarb. Put rhubarb in unbaked 9” pie shell and pour mixture over the rhubarb. Bake at 350 for 45 minutes to an hour or until set.

      Yum is right. It looks like mine, but I use my Mom's recipes. 3 cups rhubarb, chopped, 1 1/2 cup sugar, 4 Talbespoons flour, heaping, 2 Eggs, dash salt. I also add some instant tapioca. Bake 15minutes at 425 degrees to set crust, then 30 minutes at 375degrees until custard sets.
      I mix all ingredients together, stir in rhubarb. YUM

      That looks so great, I love the colour of it, so appetizing. Can you tell me, does Lovina take her own photos and if so, are they permitted to use cameras, obviously taking into consideration that they are not permitted to take pictures of themselves or others?

      Rhubarb custard pie is my all-time favorite & this recipe is wonderful! My only question is the cooking time. My oven runs hot, so I was surprised that the filling had not set after an hour in the oven. I reset the timer at 15 minute intervals 4 different times. It took a total of 2 hours to set up. Has anyone else had this happen?

        Wow, I have not heard of that, 2 hours is a long time, but if it eventually turned out OK, that is good...I may have to go in and adjust the baking time instructions or add a note. thanks for telling us!
