This is not an Amish recipe, but this is a recipe from Kelsey McNulty, the daughter of Cheryl McNulty, who does some wonderful Amish image artwork. Kelsey recently graduated from college and is a dietician now guiding people to live healthier lives.
Perfectly roasted summer vegetables.....a
The Amish, by the way, rely heavily on their gardens for food year-round. Now what they do with those garden goodies varies greatly, so may enjoy the veggies raw or roasted, ensuring a fresh infusion of vitamins and minerals and general good health. Others will pull their veggies out and pretty much deep-fry everything ensuring a cholesterol, artery-clogging experience.
This was a harvest of veggies from Gloria's garden a few years ago....wow, can you imagine roasting these! (well, maybe not the melon)

Subscribers to the e-newsletter know that I battle the scale and recipes like this area great. Although, I will say, I DO eat plenty of recipes like this: good, fresh veggies, etc. The problem is I also eat plenty of other stuff: pie, cake, cookies, chips, Coke. Yeah, a dieticians dream or nightmare, depending on their perspective. And since I became a dad my exercise has pretty much ground down to nothing.
