Amish cooks are generally legendary for their homemade pie crusts. Traditionally, lard-infused flaky pie crust have carried the day. But there are also popular pat-a-pan pie crusts and “never fail” pie crusts. I saw this pie crust recipe on the table when I gave a talk recently at the Chrisholm Historic Farmstead in Ohio. They had each table quaintly decorated with random Amish-inspired recipe cards and I found this one for “Egg Yolk Pie Crust.” This is a very old variation on the homemade pie crust and you don’t see this a ton anymore in Amish kitchens, so I was thrilled to see it. It is a very simple recipe, so if pie crusts have given you difficult over the years try this one!
