    Emma Miller's Raisin Mumbles

    This recipe for Amish raisin mumbles will make you reconsider admonishing someone to "stop mumbling."    Not sure, in fact, why these beauties are called mumbles, but this is a delicious dessert.

    This is the final "mumbles" out of the oven.

     I'll be honest, I had to improvise because I broke cardinal rule #1 of baking: make sure you have all the ingredients ahead of time.   Well, I skimmed and I had everything, except for the last ingredient listed: quick oats.  Since I was already through a lot of the recipe before I realized I was "oat-less", I decided to improvise. Desperation and a pantry that was almost empty called for creativity.  I found some peanut butter puff cereal (oats were in the ingredient list, does that count?) and crushed them into crumbs, fine, fine crumbs and used those instead.

     I also threw in some chocolate chips just for taste, but I don't know that those really added much.   The cereal crust combined with the raisin filling turned out really well. I like oats so I think I'd go with the oats, but if you don' have oats, crushed cereal does work and this recipe is worth the work.  Mmmmm, and long-timers here know that raisins are not my favorite, but in this recipe the raisins (just like in Amish raisin pie) sort of fall into this congealed filling that works very well.   So if you are looking for a different sort of dessert to take to a picnic or just something quick and easy to whip up, this recipe is a winner!

    I started with some good organic raisins.
    Then I crushed the peanut butter Panda puffs!
    Press the cereal crumb mixture into an 8 X 11 pan, this is after the raisin mixture has been poured on top.
    This is the final "mumbles" out of the oven.
    Yumble for mumbles! (okay, yumble isn't a word, but I thought it sounded good)

    Now, here is the recipe for this Amish Raisin Mumbles. Again, very classic Amish: short, simple, made from ingredients you can easily forage from your pantry.

    🍇 Amish Raisin Mumbles

    FILLING:

    • 2 1 /2 cups raisins
    • 1 /2 cups white sugar
    • 3/ 4 cups water
    • 2 tablespoons cornstarch
    • 3 tablespoons lemon juice

    CRUMBS

    • 3 /4 cup butter
    • 1 cup brown sugar
    • 1 3 /4 cups flour
    • 1 /2 teaspoon salt
    • 1 /2 teaspoon soda
    • 1 1 /2 cup quick oats (or crushed cereal can be used)
    • 1 /2 cup chocolate chips (optional)

    Instructions

    1. Mix crumbs, reserve a small amount, and press into greased cake pan.
    2. Combine filling ingredients in a bowl until well-blended
    3. Spread over crumbs.
    4. Then gently pat on remaining crumbs.
    5. Bake at 400 for 20 minutes.
