I'll be honest, I had to improvise because I broke cardinal rule #1 of baking: make sure you have all the ingredients ahead of time. Well, I skimmed and I had everything, except for the last ingredient listed: quick oats. Since I was already through a lot of the recipe before I realized I was "oat-less", I decided to improvise. Desperation and a pantry that was almost empty called for creativity. I found some peanut butter puff cereal (oats were in the ingredient list, does that count?) and crushed them into crumbs, fine, fine crumbs and used those instead.
I also threw in some chocolate chips just for taste, but I don't know that those really added much. The cereal crust combined with the raisin filling turned out really well. I like oats so I think I'd go with the oats, but if you don' have oats, crushed cereal does work and this recipe is worth the work. Mmmmm, and long-timers here know that raisins are not my favorite, but in this recipe the raisins (just like in Amish raisin pie) sort of fall into this congealed filling that works very well. So if you are looking for a different sort of dessert to take to a picnic or just something quick and easy to whip up, this recipe is a winner!

FILLING:
- 2 1 /2 cups raisins
- 1 /2 cups white sugar
- 3/ 4 cups water
- 2 tablespoons cornstarch
- 3 tablespoons lemon juice
CRUMBS
- 3 /4 cup butter
- 1 cup brown sugar
- 1 3 /4 cups flour
- 1 /2 teaspoon salt
- 1 /2 teaspoon soda
- 1 1 /2 cup quick oats (or crushed cereal can be used)
- 1 /2 cup chocolate chips (optional)
