    Five Cheesy Amish Recipes

Who doesn't like cheese?  Well, I guess if you have dairy issues you don't, but I could live on cheese.  So I thought today I'd share recipes from the Amish365 "Cheese Hall of Fame."    Homemade mozzarella cheese is quite popular among the Amish. And one of the most interesting culinary experiences of my career was getting to tour an Amish blue cheese plant in Wisconsin.  Ever heard of Salemville cheese?  Yep, totally Amish made. Good stuff.  So, here are 5 favorite cheesy recipes:

APPLE GORGONZOLA CHEESE PIZZA:  Sounds maybe not the most appetizing but, man, once you get your hands on a slice of this you'll want it again and again!  Click here for the recipe!

AMISH BACON CHEESE DIP:  Yum, yum, yum. Good stuff. Click here for the recipe.

HOMEMADE CHEDDAR MEATLOAF:   How do you make normally drab, unexciting meatloaf fun and flavorful?  Add some cheddar to it!  Click here for this great Amish recipe from an Amish woman in Pearisburg, Virginia.

    Amish Farmers Beefy Cheese Bake

AMISH FARMERS BEEFY CHEESE -  Mmmmm, bring on the cheese! Click here.

    CHEDDAR CHOWDER

    Cheddar Chowder

    CHEDDAR CHOWDER

    2 cups water

    2 cups diced potatoes

    1 /.2 cup diced carrots

    1 /2 cup diced celery

    1 /4 cup chopped onion

    1 teaspoon salt

    1 /4 teaspoon black pepper

Combine all ingredients in a large kettle.  Boil 10 to 12 minutes. Meanwhile make white sauce.  Stir sauce into undrained vegetable mixture. Heat throughout.

    White Sauce

    1 /4 cup butter

    1 /4 cup flour

    2 cups milk

    2 cups cheddar cheese,grated

1 cup cubed ham or fried bacon crumbs

In a small saucepan melt the butter. Add flour and stir until smooth (about 1 minute). Slowly add milk while stirring. Cook until thickened.  Add grated cheese and stir until melted. Toss in ham or bacon.
