We've talked about Amish haystacks on this site plenty of times. Haystacks are an Amish culinary staple, a fun meal of layered foods piled on a plate. There are breakfast haystacks, (my personal favorite) made with eggs, biscuits, gravy, cheese and anything else from the morning meal that you can pile on. Then there are the traditional supper haystacks, some of them take a Mexican flair. But this is a new variation on the haystack that an Amish woman sent me recently: a salad haystack. Perfect for spring, although I'm just not sure about the mayonnaise mixed with pickle juice.
- Torn lettuce
- Shredded cabbage
- Chopped celery
- Chopped green pepper
- Minced onion
- Grated carrot
- Mayonnaise, mixed with pickle juice and sugar to taste
- Grated colby cheese
- Layer lettuce, cabbage, celery, green pepper, onion and carrot. Spread top with mayonnaise mixed with pickle juice and sugar.
- Then sprinkle with cheese

Wonder if the mayo, pickle juice and sugar were the forerunners of Miracle Whip, etc. salad dressings? My mom always made ours and when I was a kid she made the mayo. xxxo

The mayo/pickle juice combo is fairly common among older members of my mother's family. She herself prefers it to any kind of bottled dressing or any other kind of dressing you make yourself. I love it when it is made with pickle juice from her homemade bread and butter pickles.

I grew up eating this dressing. My mom put it on salads and in her cole slaw. It is very good.
