I remember first trying these Refreshing Iced Buttermilk Cookies at an Amish bakery in Nappannee, Indiana years and years and years ago. Years later, I picked up a batch of buttermilk cookies at an Amish bakery in Daviess County, Indiana and the flavor was like I remembered them the first time: soft and sweet, but not overpoweringly so. So, a few takeaways my my experience. The recipe calls for a whole can of Coke! Man, was that satisfying, just cracking open a can and pouring 12 ounces of fizzy wonderfulness into the filling. You have to put the filling over medium heat and and stir until it thickens. But you don't want to stir it until it is like concrete....a thick pudding is probably the way to go.
