Regulars here know that I am not a coffee-drinker, I prefer my caffeine cold, in the form of Coke. But that doesn't mean I don't like the taste of mocha in my desserts. So when I saw this Amish recipe for Delicious Coffee Squares, I was intrigued. And with Rachel and my girls away for the day, I had some time to whip up some. Only one problem: the recipe called for coffee and I don't drink coffee. We do, however, have some coffee in the cupboard for company , but I didn't feel like hassling with brewing it. So, I wondered, can you microwave coffee? Apparently, you can. So, armed with that information, I set about making these Delicious Coffee Squares using microwaved coffee.
These coffee squares really turned out well, even with microwaved coffee. I think the flavor of these bars would be even better if you used a cup of coffee from your coffeemaker in these.
I don't dislike coffee, but I can sort of take it or leave it. I've never been a massive coffee drinker (actually, I don't drink any) so no matter how freshly brewed I just don't get into it much. Maybe I am missing something. Freshly brewed coffee does smell good and if I dump enough sugar in it I can enjoy it. This coffee squares that comes from an Amish woman in Iowa.
Oh, and then there is the question of whether these bars are caffeinated....I ate a couple of these last evening and I really had trouble sleeping last night and I think there's a connection. So, my advice is to either eat these in the morning or use decaf in the recipe and you'll be fine.

Okay, above is the batter and notice the flecks of coffee beans? You wold not get that, I don't believe, in non-microwaved coffee. Still, it all tasted great.
The chocolate chips are a great addition. Toss in some walnuts, if you must.

The recipe calls for a glaze and that is what I used but, in retrospect, I'd try these again using a brown sugar frosting. These Delicious Coffee Squares turned out really, really well and I'll definitely make them again sometime (with properly brewed coffee).
☕ Delicious Coffee Squares
- ⅓ cup butter, softened
- 1 cup packed brown sugar
- 1 egg
- ⅓ cup hot strong brewed coffee
- 1-½ cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- 1 cup (6 ounces) semisweet chocolate chips
- GLAZE:
- ¾ cup confectioners' sugar
- ¼ teaspoon vanilla extract
- 3 to 4 teaspoons milk

- In a large bowl, cream butter and brown sugar until light and fluffy.
- Beat in egg and coffee.
- Combine the flour, baking powder, cinnamon, baking soda and salt; gradually add to creamed mixture.
- Stir in chocolate chips and walnuts.
- Spread into a well-greased 8-in. square baking dish.
- Bake at 350° for 30-35 minutes or until a toothpick inserted near the center comes out clean.
- In a small bowl, combine the confectioners' sugar, vanilla and enough milk to achieve a desired consistency.
- Drizzle over warm bars.
- Cool completely on a wire rack before cutting.
