This is a popular recipe in Amish homes and I'm not surprised.  This is a hearty, basic protein-packed "plate piler" that can feed a bunch of people and leave plenty for seconds (and thirds). This recipe is easy, not a lot of prep time involved, but a lot of flavor!

    🙋 FAQ

Do The Amish Raise Their Own Pork?

Many Amish do have hogs on their farm. The hogs are super at eating tables scraps and provide a source of meat for an Amish family. Hog-butchering is a labor-intensive, messy job and is often done in February or March before the weather gets really warm.

An interesting aside, most Amish cooks, in my experience, use stainless steel cookware, not cast iron. Cast iron was once very popular and the main skillet of choice in the Amish kitchen but some very enterprising and successful door-to-door salespeople really did a great job 50 years or so ago of persuading Amish cooks to ditch their cast-iron skillet and switch to easier-to-clean stainless steel. So that is what you find today in the majority of Amish kitchens. That said, cast iron is making a comeback among the Amish just as it is among the rest of America.

My Mom didn't have an white or small yellow onion so she used diced frozen onion and you could use sliced or shredded cheddar. I love this skillet supper sausage recipe!

Potatoes and sausage form the foundation of this delicious supper!

Use a large skillet and use your favorite potatoes. Brown the sausage over medium or medium high heat. Season lightly with salt if you like.

This is ground sausage, but you could use ground turkey, hamburger, or venison. This is a very versatile casserole!

Don't drain the sausage when done cooking. But you could add some mushrooms, tomatoes, rice, or any other of your favorite ingredients here. As the recipe appears below it is a very simple skillet supper, but you can add your favorite touches to this dish! Some red bell peppers or yellow corn would add some nice color and flavor, I think.

You can use sliced or shredded cheese.

I liked Cheddar cheese with this, but you could use colby, Swiss, Parmesan or a blend. There are spices like parsley, cloves garlic, and oregano you could sprinkle in while it is in the pan to give this dish even more of a taste and flavor pop. If it were me, I'd probably add some spice with a few red pepper flakes.

This is the delicious casserole in its final form. I have to once again give my parents kudos to portion control. I'd have my plate piled with this! Pairs well with veggies!

This is a versatile recipe, you could switch out the sausage for hamburger and get a hamburger skillet but my parents tried it this way and my Dad (who isn't what I'd call picky, but he can be a bit of a food critic) deemed it "delicious." You get delicious pork in all bites and it is just amazing.

Since the recipe as it appears below doesn't have any real vegetables in it (you can add some), it pairs well on your plate with something like peas, corn, broccoli or in season asapragus and zucchini. Any leftovers can be stored in an airtight container and popped into the refrigerator.
