    For newcomers here, Mennonite cooking style is similar to Amish. I find that Mennonite cooking styles have more variations. That observation makes sense, though, because Mennonites vary great in how they implement their faith, from ones that are progressive and steeped in all the latest technology to Mennonites that still use the horse and buggy.

    Probably the most conservative Mennonite settlement that I have personally been to would be Dayton, Virginia, which is a horse and buggy settlement. But so is Frankfort, Ohio, which in some ways seem more conservative. Now, the most conservative Mennonite community that I have never been to, but my parents went for me, is Rich Hill, Missouri. That settlement, based on what they told me and pictures they showed me, was and is super conservative. I have a couple of contacts there that I exchange letters with and they do seem very conservative there.

    Okay, so back to this Sheet Pan Honey-Mustard Chicken And Vegetables. My parents made this the other night and it really does have a super flavor. I sampled parts of the meal that I thought I'd like and, for instance, the broccoli just was coated with a very flavorful honey-mustard juice.

    Start out with fresh veggies

    Make it easy and use pre-cut everything as far as the veggies go, or buy fresh and start chopping!

    You can vary the veggies in this. I mean, I have never been a huge carrot fan. So I'd probably scale back on the carrots and add some sweet potatoes or some asparagus maybe. I don't know, but I'm just not a huge carrot fan.

    Honey mustard

    Now, I never have a problem making more honey-mustard, so if you do want to make more, feel free! You can always tinker with a honey-mustard sauce like this. A little brown sugar to the honey-dijon sauce would sweeten it a bit, that is probably what I would do.

    Mennonite Honey-Mustard Sheet Pan Chicken and Vegetables

    My parents did not use a sheet pan for the recipe, they used a glass baking dish and I think...well, I think they should have used a sheet pan, I think the juice would spread out and caramelized more. So you use your own judgment. They thought it could use more liquid, but I think it probably would have turned out great if they did the sheet pan. I love authentic, real Amish and Mennonite recipes so I am loathe to tinker with them much.

    What is a sheet pan, anyway? Here is a primer. A lot of people toss around terms interchangeable, mixing up a cookie sheet, baking pan, baking dish, etc. A sheet pan is a specific utensil.

    This is what a sheet pan is, or at least something similar. Although, geez, I have seen them without "sides" too, or just very low rims. So just something big that conducts heat well where you can really spread out the chicken and veggies.

    🍗Sheet Pan Chicken Ingredients

    • ⅓ cup honey
    • ¼ cup dijon mustard
    • 1 T. white wine vinegar
    • 1 t. kosher salt
    • ½ t. pepper
    • 1 pound red potatoes, quartered
    • 2 T. olive oil
    • 1 small onion
    • 1 pound broccoli florets
    • ½ pound of 1" cut carrots or baby carrots
    • 1 ½ pounds chicken tenders

    📋Sheet Pan Chicken And Vegetables Instructions

    1. Put a large sheet pan in a 425 degree oven while cutting up the vegetables. 
    2. Whisk the honey, dijon, ½ t. salt, pepper, and vinegar in a small bowl.
    3. Place the rest of the ingredients in a large bowl including the remaining salt along with the honey mixture and toss to combine well. 
    4. Spread in a single layer on the sheet pan. and roast until brown and the chicken and vegetables are done for about 30 minutes.
