Essenhaus Amish chicken salad, a refreshing summer treat!
DER DUTCHMAN ESSENHAUS CHICKEN SALAD: Ah, yes, this institution in Middlebury, Indiana draws huge crowds for their heaping portions, pie, and entrees. But what says summer more than chicken salad? Not much! This chicken salad using the Essenhaus's recipe was recreated by Patricia at her Patchwork Quilt blog and, wow, it looks worth trying! Click here for the recipe.
LEMON BISQUE: I was going to ban lemon recipes from Amish365 because they never seem to do well, but the lemon lovers protested so here is lemon....looks like a refreshing recipe and, hey, it's summer, so lemon is in. Click here for the recipe which comes from a Mennonite cookbook.
SUMMER IN THE CONEWANGO VALLEY: Wow, Tom caught some gorgeous countryside and Amish imagery showcasing the summer season in this bucolic area. Click here. I spent some time there several years ago but it was when winter was gripping the valley Would love to see it during the summer.
CHICKEN ITALIANO: This recipe on the Charm City Ramblings blog comes from a Mennonite cookbook and once again showcases the affinity for Italian cooking at many Plain people have. Looks like a good recipe! Click here.
PINECRAFT SUMMER: Check out the slow comings and goings in the Amish enclave of Pinecraft as it crawls into the quiet summer months. Click here.
